Since it is less pungent, it is more suited for the infusion of drinks and dishes. Spearmint is considered to be one of the most popular and invigorating types of tisanes enjoyed globally. The story of vanilla begins with the Totonaco Indians of Mexico, who were the first to unearth its secret. They fell to the Aztecs, who were in turn soon conquered by the Spaniards, under the leadership of Harnando Cortez. Cortez brought his precious plunder, including a few beans of vanilla, back to Spain. Vanilla beans are the fruit of an orchid, which blooms for only one day each year. Because of this, and also because the flowers must be hand-pollinated, vanilla is the second most expensive spice on earth, after saffron.
Formosa, meaning ‘beautiful island’, is what Dutch traders called Taiwan. The teas grown here, mainly north of Taipei, continue to be called as such. Tea can be harvested up to six times a year here, although the high mountain teas may be only twice a year. Oolong tea had been a very important export for the island until the 1980’s, when tea growers turned their focus to native oolong enthusiasts. Today, oolong tea is mainly produced for tea lovers in Taiwan, and the rarest, most prized lots are extremely difficult to find in the West. Tea culture is so alive and well in Taiwan, annual competitions are held amongst tea growing districts to reward the most outstanding oolongs each year. Gold medal winning oolongs are some of the most expensive in the world.

As inspiring as it may sound, the story is factually incorrect. Chinese have never been black tea drinkers, and so it was very unlikely that they had a tea recipe for Earl Grey to bestow on visitors. Also, Charles Earl Grey never set foot in China.

The finished tea is given some extra drying over smoking pine fire, imparting a sweet, clean smoky flavour to the tea. Our Lapsang Souchong is clean and slightly cool smokiness in the aroma, like menthol. Sweet, refreshing smoky flavour, crisp and edgy. Golden-coppery colour in the cup; the mark of a Lapsang that hasn’t been smoked to a jerky. Sweet pine flavour, lightly evaporating finish. Darjeeling Sungma Muscatel is a second flush black tea from the famous Darjeeling region of India. Darjeeling tea is treasured for its rich golden liquor and distinctive muscatel (a type of grape) flavour. This tea scores high on both counts. The Maharani Hills are located in a particularly coveted section of Margaret‘s Hope Tea Garden at an altitude of more than 2,000 metres. Our Morning Tune Blend is made up of two very popular black teas: Assam and Ceylon. Assam is the world’s largest tea-growing region, lying on either side of the Brahmaputra River, and bordering Bangladesh and Burma (Myanmar). Assam has a tropical climate, heavily influenced by the monsoons and without the normal hot and dry season found in the rest of India. In the warmest month, the temperature is around 30ºC, while in January, roughly 15ºC is the norm. The most prised Assams are the second flush teas, coming right before the monsoons, with a rich, spicy and malty flavour.
Teas harvested during and right after the rainy season tend to be softer and more floral in character.
The tiny island of Sri Lanka is the world’s third largest producer of tea, due in part to the fact that tea can be harvested year-round here. The island is blessed with perfect trade winds and striking geography, creating unique micro-climates favourable to tea production.
