The story goes that in 1830, Charles Earl Grey, an English diplomat travelled  to China, and as a reward for his act of kindness, a local man presented him with the recipe for making this distinctive tea. As inspiring as it may sound, the story is factually incorrect. Chinese have never been black tea drinkers, and so it was very unlikely that they had  a tea recipe for Earl Grey to bestow on visitors. Also, Charles Earl Grey never set foot in China.

    Ingredients: 100% Elderflower, rubbed

    Origin: Kosovo

Elderflowers, typically found in British countryside, are clusters of cream-coloured blossoms growing on elderberry trees. These flowers have a delicate flavour and a distinctive creamy and floral smell.

The use of elderflowers dates back centuries. In 400 BCE, Hippocrates referred to the elder tree as his “medicine chest.” In Roman times, the roots were ground into an ointment for rubbing on ailments. In traditional Chinese medicine, it’s believed that elder dissolved in wine aided in the treatment of rheumatism.

Elderflowers are a natural source of vitamin C, antioxidants and bioflavonoids and for this reason have traditionally been used in the treatment of sinusitis, allergies, colds, influenza (flu), swine flu and bronchitis. Making a delicious elderflower tea can help alleviate some of the aforementioned conditions by stimulating the immune system and increasing the activity of antioxidant enzymes in the blood. Elderflowers have also been associated with the prevention of diabetes, constipation, found to increase urine production (as a diuretic) and increase sweating (as a diaphoretic), and stop bleeding. Elderflower is also used as a gargle and mouthwash for coughs, colds, hoarseness (laryngitis) and shortness of breath. It is sometimes applied on the skin to minimise the inflammation arising from rheumatism.

In culinary terms, the use of elderflowers is varied. The flowers are most commonly used to flavour syrups for cordials. They are also used as an infusion in the flavouring of jellies, ice creams and pannacottas or mixed directly into cakes, tarts and trifles, pairing particularly well with fruit tarts such as rhubarb and gooseberries. The flowers themselves are edible too – they make a delicate and beautiful garnish on their own, or alternatively, the whole head of elderflowers can be deep-fried in batter and dusted in icing sugar to make a crispy garnish or snack. Elderflowers can also be eaten straight from the bush – the pollen that collects on them is sweet, while the flowers themselves are tart like grape skin. Elderflower, however, is particularly safe when included in food, because it contains a cyanide-producing chemical which can cause nausea, vomiting, and diarrhoea, and which is only removed by means of cooking. In manufacturing, elderflower extracts are used in perfumes, eye and skin lotions.

Elderflower works best with a light flavoured tea (green or white), or can be drunk as a herbal infusion enjoyed hot or iced.

Disclaimer:  Taking elderflower along with diabetes medications might cause your blood sugar to drop too low since it is associated with the decrease in blood sugar levels. There is not enough reliable information about the safety of taking elderflower if you are pregnant or breast-feeding. Please consult your healthcare professional prior to its consumption.

Aromatic Maltese Carob tangled up with Cocoa Shells for a unique Maltese Chai
    From: 15.95

A unique indulgent speciality! Tgħanniqa Chai is an aromatic yet velvety Maltese tea blend with carob pods blended with a strong Ceylon black tea, creamy Cocoa Shells, Orange peel and Cinnamon. Carob comes from a sweet evergreen tree that is grown heavily in the Maltese country roads and other Mediterranean countries. The aromatic Maltese carob and cocoa shells make this blend an interesting combination for when you need a chocolate punch. With a subtle spice taste, it’s the perfect Maltese Chai. The Ceylon black tea base gives you the option to enjoy this cup with milk or be adventurous and steep it directly in milk!

Try the Tghanniqa Blend with Ceylon & Maltese Carob.

Our Maltese generations of old used carob as a healthy beverage to boost their immune system, sooth sore throats and coughs on a rainy day and aid digestion.

Carobs were a staple diet with early civilizations, with archeological findings indicating that  early Egyptians used carobs as a natural sweetener.

Carobs have also been called St. John’s bread or locust bean because the pods were once thought to have been the “locusts” that were eaten by John the Baptist in the Wilderness.

That story was apparently wrong, as the prophet actually ate migratory locust.

It is also hinted that early jewellers and goldsmiths in the Middle East used to weigh gold and gemstones against the seeds of the carob tree.

A Carob pod takes between 11 to 12 months to develop and ripen. By then the seeds are bursting with complex sweet and aromatic flavours that provide  a hint of chocolate and earthy root herbs. Characterised by a rich, deep red colour, this special tea blend provides a delicate balance of  sweet and savoury indulgence all in one steamy cup.

A warm and softer chai with all the light flavours of a green tea perfect to drink any time!

Historically, tea in India was viewed as a herbal medicine, rather than as a beverage for taste. Some chai spice blends still in current use are derived from Ayurvedic medical texts. Popular spices include anise, cinnamon, clove, cardamom, peppercorn and ginger. Traditional preparation actually calls for the spices, milk and leaves to be simmered over sustained heat, rather than steeped in preheated water. In India, chai is served in little clay cups from chai carts. After enjoying your tea, the cups are shattered on the ground and allowed to compost – an earth-friendly alternative to paper or plastic cups.

The name Chamomile comes from the Greek word meaning ‘ground apple’. Its history dates back at least to ancient Egypt, where Chamomile tea was prescribed as a cold remedy. The Romans enjoyed it as a beverage, as well as an incense. Ironically, the name ‘Roman Chamomile’ by which it is sometimes known, does not stem from this time. It rather comes from an arbitrary naming of the herb in the 19th Century by a botanist who happened to find some growing in the Roman Coliseum.

This golden herb will always be a favourite with its calming effect and sweet floral finish. Serve with honey for extra sweetness.

Our earthy rooibos is complimented perfectly with the rich, warm and soothing vanilla fragrance. Comforting indeed!

Rooibos tea is well known for a number of benefits namely to aid nagging headaches, insomnia, asthma, eczema, bone weakness, hypertension, allergies, and premature aging.

The story of vanilla begins with the Totonaco Indians of Mexico, who were the first to unearth its secret. They fell to the Aztecs, who were in turn soon conquered by the Spaniards, under the leadership of Harnando Cortez. Cortez brought his precious plunder, including a few beans of vanilla, back to Spain. Vanilla beans are the fruit of an orchid, which blooms for only one day each year. Because of this, and also because the flowers must be hand-pollinated, vanilla is the second most expensive spice on earth, after saffron.

This naturally quiet tea is made up of young and delicate tea leaf buds enhanced with the graceful scent of jasmine flowers. Paired together for several nights until the perfect balance is created.
    From: 18.95

Jasmine Silver Needle white tea is made up of young and elegant tea leaf buds with a whisper of jasmine aura.

Jasmine tea production is a two-step process. The tea is harvested and finished in the spring, then carefully stored until the summer, when the jasmine starts to bloom at night. Each evening, the tea is carefully layered with fresh blooms, which will open and give their scent to the tea. In the morning, the flowers are removed and the process is repeated again that evening. This happens several nights in a row, until the tea master has the aroma balance just right. At the end, the tea is refired to dry off any flower moisture imparted to the leaf. This is why some jasmines can have a toasty finish.

The exotic lushness of ripened mangoes mixed with the natural goodness of green tea. Happiness in a cup!
    From: 14.95

Ideal for Hot and Cold Brewing – makes delicious iced tea!

The origins of our Mango Twist tea reside in a Hindu legend, where a mango tree grew from the ashes of the sun princess, who had been incinerated by an evil sorceress. When the ripened mango fell to the ground, the beautiful princess emerged again.

Mangoes originated in Southeast Asia, where they had been cultivated for over 4,000 years. Since their discovery, mango groves have spread to many parts of the world, though mostly the tropical and sub-tropical climates. There are over 1,000 different varieties of the mango plant in existence, and India alone produces half of the world’s supply. Mangoes are used widely in the culinary world, from sweet sticky rice, to delicate chutneys, to spicy and savoury pickles. It’s also an important part of non-food life in several cultures; both the fruit and leaves are used for decoration, religious ceremonies and weddings.

    Ingredients: 100% Stinging Nettle

    Origin: Germany

Stinging nettle is a highly versatile ingredient that can be used in stews and soups, stir fries and smoothies, and also brewed as a nourishing herbal tea. It was used as a herbal remedy in Ancient Egypt for the treatment of arthritis and lower back pain. It is also documented that the Roman troops rubbed nettle on themselves to keep warm.

Studies have linked this green leafy vegetable to a number of potential health benefits. Stinging nettle is rich in an array of vitamins and minerals, fatty acids, essential amino acids and polyphenols, many of which act as antioxidants inside the body. Some studies indicate that stinging nettle extract can raise blood antioxidant levels and supress inflammation, with research indicating that the application of stinging nettle cream or consuming stinging nettle products has shown to relieve inflammatory conditions, such as arthritis and seasonal allergies such as hay fever. Interestingly, a few studies have also suggested that stinging nettle may help in the reduction of prostate size and treat symptoms associated with enlarged prostate glands in males. It may also assist with the lowering of blood sugar and blood pressure levels.

Stinging nettle, Urtica dioica, is derived from the Latin word uro, which means “to burn”, because its leaves can cause a temporary burning sensation upon contact, producing itching, redness and swelling. However, once processed into a supplement, dried, freeze-dried or cooked, stinging nettle is safe for consumption.

While Stinging Nettle is considered to be a mild tisane and has been attributed to a number of positive health benefits, more studies are necessary before any recommendations can be made. Always consult a doctor before using any herbal remedy to treat a medical condition.

100% Ceylon Black Tea Leaves – OP1 Kenilworth, Sri Lanka.

This garden produces a leaf tea quality that is unique in Sri Lanka, with an extremely accurately processed leaf and an unmistakable character. It’s leaf is coarse, vert wiry and rolled. Once brewed it produces that medium-bodied, spicy-aromatic cup we so much love for an afternoon tea.

The tiny island of Sri Lanka is the world’s third largest producer of tea, due in part to the fact that tea can be harvested year-round here. The island is blessed with perfect trade winds and striking geography, creating unique micro-climates favourable to tea production. Tea flavour is very much tied to the altitude where it grows here: low, medium or high, each with its own sought-after character. Low-grown teas are hearty, tangy and very rich in taste. High-grown teas are much lighter bodied, but are more aromatic and sweet. Mid-grown are a combination of the two, depending on exact conditions. Medium to full body with noticeable unique aromatics.

This distinguished Oolong is known for its abundance of floral and fruity notes and more prominently its tempting scent of sweet milk

Formosa, meaning ‘beautiful island’, is what Dutch traders called Taiwan. The teas grown here, mainly north of Taipei, continue to be called as such. Tea can be harvested up to six times a year here, although the high mountain teas may be only twice a year. Oolong tea had been a very important export for the island until the 1980’s, when tea growers turned their focus to native oolong enthusiasts. Today, oolong tea is mainly produced for tea lovers in Taiwan, and the rarest, most prized lots are extremely difficult to find in the West. Tea culture is so alive and well in Taiwan, annual competitions are held amongst tea growing districts to reward the most outstanding oolongs each year. Gold medal winning oolongs are some of the most expensive in the world.
