The story of vanilla begins with the Totonaco Indians of Mexico, who were the first to unearth its secret. They fell to the Aztecs, who were in turn soon conquered by the Spaniards, under the leadership of Harnando Cortez. Cortez brought his precious plunder, including a few beans of vanilla, back to Spain. Vanilla beans are the fruit of an orchid, which blooms for only one day each year. Because of this, and also because the flowers must be hand-pollinated, vanilla is the second most expensive spice on earth, after saffron.
The story goes that in 1830, Charles Earl Grey, an English diplomat travelled to China, and as a reward for his act of kindness, a local man presented him with the recipe for making this distinctive tea. As inspiring as it may sound, the story is factually incorrect. Chinese have never been black tea drinkers, and so it was very unlikely that they had a tea recipe for Earl Grey to bestow on visitors. Uva ursi, also known as bearberry is an evergreen shrub that produces red berries and flourishes in alpine forests in many regions. Bears are said to be fond of the shiny, bright red or pink fruit, which is edible, but sour tasting. In fact, the Latin name uva ursi literally translates to “bear’s grapes.”
The leaves have been used medicinally since the 2nd century before the discovery of antibiotics. Native Americans used it as a remedy for urinary tract infections and kidney stones. Prior to the discovery of sulfa drugs and antibiotics, uva ursi was a common treatment for bladder-related infections.
Researchers have discovered that uva ursi’s ability to fight infection is due to the natural chemicals arbutin and glycosides. Glycosides might help reduce the bacteria in your urine. Your body transforms glycosides into hydroquinone, a compound with antibacterial properties.
Today, uva ursi is sometimes used to treat urinary tract infections (UTIs) and cystitis (bladder inflammation). Further research in this field is required. However, some studies have shown that combining uva ursi with dandelion root and leaf, help prevent recurrent UTIs. Uva ursi has also been used topically (to the surface of the skin) because it chemically produces hydroquinone, which is a substance that is used in skin lightening creams. Hydroquinone is prescribed for the treatment of dark skin patches that develop due to skin damage.
Brewing preparation: 1 teaspoon for 10 minutes in boiling water.

However, always consult with your doctor prior to its use. Elderflowers, typically found in British countryside, are clusters of cream-coloured blossoms growing on elderberry trees. These flowers have a delicate flavour and a distinctive creamy and floral smell.
The use of elderflowers dates back centuries. In 400 BCE, Hippocrates referred to the elder tree as his “medicine chest.” In Roman times, the roots were ground into an ointment for rubbing on ailments. In traditional Chinese medicine, it’s believed that elder dissolved in wine aided in the treatment of rheumatism.
Elderflowers are a natural source of vitamin C, antioxidants and bioflavonoids and for this reason have traditionally been used in the treatment of sinusitis, allergies, colds, influenza (flu), swine flu and bronchitis. Making a delicious elderflower tea can help alleviate some of the aforementioned conditions by stimulating the immune system and increasing the activity of antioxidant enzymes in the blood. Elderflowers have also been associated with the prevention of diabetes, constipation, found to increase urine production (as a diuretic) and increase sweating (as a diaphoretic), and stop bleeding. Elderflower is also used as a gargle and mouthwash for coughs, colds, hoarseness (laryngitis) and shortness of breath. It is sometimes applied on the skin to minimise the inflammation arising from rheumatism.
In culinary terms, the use of elderflowers is varied. The flowers are most commonly used to flavour syrups for cordials. They are also used as an infusion in the flavouring of jellies, ice creams and pannacottas or mixed directly into cakes, tarts and trifles, pairing particularly well with fruit tarts such as rhubarb and gooseberries. The flowers themselves are edible too – they make a delicate and beautiful garnish on their own, or alternatively, the whole head of elderflowers can be deep-fried in batter and dusted in icing sugar to make a crispy garnish or snack. Elderflowers can also be eaten straight from the bush – the pollen that collects on them is sweet, while the flowers themselves are tart like grape skin. Elderflower, however, is particularly safe when included in food, because it contains a cyanide-producing chemical which can cause nausea, vomiting, and diarrhoea, and which is only removed by means of cooking. In manufacturing, elderflower extracts are used in perfumes, eye and skin lotions.
Elderflower works best with a light flavoured tea (green or white), or can be drunk as a herbal infusion enjoyed hot or iced.

Juniper berries are a member of the cypress family. They have been popular in Hungary and southern Europe where the trees are particularly widespread. They are classed as a spice and are considered to be a valued seasoning for game, venison, duck, rabbit, pork, ham and lamb. The berries can be used in savoury dishes, serving as an excellent flavouring in meat pates and terrines, as well as in sweet dishes such as cakes. They can be eaten fresh or dried, whole or ground, raw or cooked. The spice is most famously used to give gin its distinctive flavour due to the main flavour compound pinene which gives the pine tree its distinct scent.
Juniper berries have a long history of traditional use, treating a range of discomforts such as kidney and urinary tract infections, digestive issues, gout, warts and skin growths. Their antiseptic properties were well known amongst early civilizations. In medieval times, Juniper was used to ward off witchcraft and black magic. Its aromatic smoke was used for ritual purification. Egyptian papyrus dating back to 1500 BCE refers to the medicinal use of Juniper Berries in the treatment of tapeworm infestations. The Romans also used the berries for purification and stomach ailments.
Given the above, however, there is limited scientific research and laboratory studies to date pointing towards benefits of its consumption. Junipers have nonetheless been found to be rich in antioxidants and phytochemicals, protecting the body from free radical damage. Some research points at Juniper as being a powerful diuretic, helping to cleanse the system of excess fluids and stimulating the kidneys. Juniper Berries contain bitter compounds that stimulate bile flow and the production of digestive enzymes. This allows the body to breakdown foods more easily and enhances nutrient absorption. Due to their astringent properties, they have been found to be effective at relieving heartburn and other digestive upsets. Juniper Berries are sometimes referred to as “Nature’s Insulin”, with some studies showing that it contains natural insulin that can work in the body just like its pharmaceutical counterpart.

Jasmine Silver Needle white tea is made up of young and elegant tea leaf buds with a whisper of jasmine aura.
Jasmine tea production is a two-step process. The tea is harvested and finished in the spring, then carefully stored until the summer, when the jasmine starts to bloom at night. Each evening, the tea is carefully layered with fresh blooms, which will open and give their scent to the tea. In the morning, the flowers are removed and the process is repeated again that evening. This happens several nights in a row, until the tea master has the aroma balance just right. At the end, the tea is refired to dry off any flower moisture imparted to the leaf. This is why some jasmines can have a toasty finish.

Stinging nettle is a highly versatile ingredient that can be used in stews and soups, stir fries and smoothies, and also brewed as a nourishing herbal tea. It was used as a herbal remedy in Ancient Egypt for the treatment of arthritis and lower back pain. It is also documented that the Roman troops rubbed nettle on themselves to keep warm.
Studies have linked this green leafy vegetable to a number of potential health benefits. Stinging nettle is rich in an array of vitamins and minerals, fatty acids, essential amino acids and polyphenols, many of which act as antioxidants inside the body. Some studies indicate that stinging nettle extract can raise blood antioxidant levels and supress inflammation, with research indicating that the application of stinging nettle cream or consuming stinging nettle products has shown to relieve inflammatory conditions, such as arthritis and seasonal allergies such as hay fever. Interestingly, a few studies have also suggested that stinging nettle may help in the reduction of prostate size and treat symptoms associated with enlarged prostate glands in males. It may also assist with the lowering of blood sugar and blood pressure levels.
Stinging nettle, Urtica dioica, is derived from the Latin word uro, which means “to burn”, because its leaves can cause a temporary burning sensation upon contact, producing itching, redness and swelling. However, once processed into a supplement, dried, freeze-dried or cooked, stinging nettle is safe for consumption.
