In comes Copenhagen Sparkling Tea! A combination of Nordic innovation and Asian tea traditions resulting in an organic low-/non-alcoholic sparkling drink based on the careful selection of exclusive tea sorts.
The Origin
Sparkling Tea was developed by the award-winning sommelier Jacob Kocemba, during his time at a Michelin restaurant in Copenhagen, Denmark. He realized the many possibilities within the world of tea, when he couldn’t find a matching wine for a dessert, despite a wine cellar of more than 1,700 wines. Instead, the solution came in a homemade tea extract, which consisted of a blend of different exclusive teas. The new drink became a great success and a favourite amongst the guests of the restaurant.
The Process
The Sparkling Teas, imported and distributed in Malta by Tettiera® are made of a blend of up to 13 different teas – organic, of course – in a combination of black, green, white and oolong teas. Only highest quality teas sourced from the best plantations and producers around the world are included in the blends.
Jacob Kocemba, the sommelier behind Sparkling Tea, hand-brews all the tea. Each tea is therefore handled individually, and every production is done in small batches to ensure no detail is overlooked.
The tea blends are bottled together with a dash of white wine or grape must as natural sweetness and to complement and enhance the flavours of the teas. Other natural aromas such as lemon juice are added, to hit just the right notes. There are no artificial additives in our Sparkling Tea. The bottles are then left to rest for 8-12 weeks.

He pairs the Sparkling Tea LYSERØD (o% Alcohol), which is the lighter and more aperitif-like of the options out there. The various types of tea from different locations in Asia give LYSERØD a rather Asian character. LYSERØD’s presents floral and herbaceous notes from the Darjeeling and Oolong teas, an almost smoky berry character from the hibiscus and the subtle umami character coming from the Japanese tea, which contributes with an almost seaweed kind of aroma and taste.
You must be gentle when pairing food with this sparkling tea in order not to overpower its subtle notes. Thus, Rasmus Palsgård decided to go with an almost sashimi-like serving of cod to create a light and kind of Japanese sensation.
Another Sparkling Tea, BLÅ (o% Alcohol), starts out with delicate aromas of Jasmine, chamomile, and a hint of citrus. This is followed by a round taste from the careful selection of white teas and accompanied by good complexity and depth from the green teas. It ends in a long finish joined by comfortable tannins created by the Darjeeling First Flush. The colour is light green with yellow nuances.
BLÅ is the perfect alcohol-free aperitif. It also pairs beautifully with various starters, vegetarian or light mains, and most desserts.
