Historically, tea in India was viewed as a herbal medicine, rather than as a beverage for taste. Some chai spice blends still in current use are derived from Ayurvedic medical texts. Popular spices include anise, cinnamon, clove, cardamom, peppercorn and ginger. Traditional preparation actually calls for the spices, milk and leaves to be simmered over sustained heat, rather than steeped in preheated water. The genus Raspberry consists of over 200 distinct species, however, only two of these are presently cultivated. The first mention of raspberry comes from the people of Troy (Helen perhaps?), located in modern-day Turkey. Its original name was ‘ida’ – a reference to the mountain on which it was first spotted. The medicinal properties believed to cluster in its leaves were of more interest to its early users than the sweet, red fruit. Today, you can find red raspberries, as well as black, purple and golden.

Tanzania Usumbara is a speciality single origin green tea from the Kilimanjaro region in Tanzania, Africa. A rarity by fact, this green tea is uniquely aromatic, smooth and richly vegetal. Initially started with a small cultivation experiment directly at the foot of the mountain, today generates an exquisite range of exceptional teas. Produced to the east of the Usambara Mountains in the high plateau of the Masai Steppe, this tea produces a most appealing cup. The area has great bio-diversity, surrounded by rain-forest of the Amani Nature Reserve.
